Holiday Festivities

Mindy and Ligeia decided to make homemade eggnog for the holidays. They had never done so before so they looked up a recipe online. If you’re interested in trying the same, here are the ingredients you will need (6 servings):

– 6 egg yolks
– 1/2 tsp of salt
– 1/2 cup sugar (the recipe called for 3/4 cup, but would have been sweet enough with 1/2 that)
– 2 cups milk (we used soy milk)
– 3 cloves
– 1 tsp ground cinnamon
– 1 tsp vanilla
– 2 cups cream
– 1 cup of rum (we didn’t have any, so just replaced this with more soy milk)
Step 1: in a saucepan on medium heat, mix together milk, cloves, cinnamon and vanilla. Heat for about 5 minutes, but do not let mixture come to a boil…
Step 2: While the milk mixture heats, separate the eggs to get only the yolks…

Step 3: Whisk together egg yolks and sugar until mixture is fluffy.

Step 4: When milk mixture is heated throughout, slowly incorporate it into the egg mixture (we used a tablespoon to transfer the hot milk into the eggs; if hot liquid is added to quickly to raw eggs, the eggs will cook and you’ll have scrambled eggs in your egg nog!)
Step 5: When milk and egg mixtures are combined, return it to the saucepan and continue heating, stirring constantly, for 5 minutes. Again, do not let the mixture come to a boil
Step 6: Strain mixture (to remove the cloves) and let stand for 1 hour to cool…
Step 7: When mixture has cooled, mix in cream and rum, and chill in fridge overnight. DONE!
What to do with those leftover egg whites…hmmmm… Here’s what Mindy decided to do: Make a chocolate banana cream pie, with egg white meringue:
On the 25th, known as Christmas to some, Mindy told Ligeia she had a surprise for her. She even had to be blindfolded so she wouldn’t know where we were going. Ligeia had no idea what to expect but the blindfold made the 10 minute drive much more interesting than usual.
When the car stopped moving, Ligeia took off the blindfold and saw this movie theater, where we went to see “We Bought a Zoo”. Thanks Mindy for making an ordinary trip to the movies much more exciting! 🙂
On Boxing Day, we met our friends Sarah and Betty and their 2 children for dinner at our favorite Thai restaurant called Thai Terrace. It was so great to spend some time with them.
After dinner we stopped at our local liquor store to pick up a case of Gerolsteiner, Ligeia’s favorite brand of sparkling water and we saw this when we first walked in. Has the violence in Mexico gotten so bad that even the tequila carries guns?
